Ingredients
*1 pound 90% or higher lean ground beef
*3/4 cup onion, chopped
*4 cloves garlic, minced
*2 (14.5 once) cans no salt added tomato pasta
*1 (6 once) can salt added diced tomatoes, undrained
*3 anchovy fillets, chopped
*1 teaspoon dried oregano, crushed
*1/2 teaspoon crushed red papper
*8 ounces dried multigrain penne pasta (about 21/2 cups)
*1/4 cup kalamata olives, chopped
*1/4 cup snipped fresh parsley
*1 snipped fresh per sley
Preparation
First
In a large nonstick skillet cook ground beef, onion and garlic over medium head until meat browns and onion is tender. Drain off fat and discard.
Second
In a 31/2 or 4 quart slow cooker combine beef mixture, tomatoes, tomato pasta, anchovies, oregano and crushed red papper. Cover and cook on 'low heat' setting for 2 to 3 hours. Meanwhile, cook pasta according to package direction, drain.
Thread
Before serving, stir oliver and 1/4 cup parsley into slow cooker. Serve beef mixture over hot cooked pasua. If desired, garnish with additional snipped fresh parsley.
